I think having a mother figure in the story is fine, the only way it could hinder or replace the daughter's is if the mangaka suddenly decides he doesn't care about the younger girl anymore and wants to focus on the mom. But at that point, the mangaka is probably just tired of their series and wants to do something else--which is a completely different issue.
It's a smart ploy to add moms to your manga really. Baits in the guys who want older women or women their age, makes the series seem more alive by having a character with an active and loving family, and nobody's gonna say no to more hot girls in the series.

I like it too. In the past a mother character was at best that who prepared breakfast before the MC or heroine went to school. Now, they draw and make them in a way that might rival the main girl of the show.

I don't think there's been a huge change nor is it a trend. People have been drawing hot moms in various forms of media for a very long time, I think it's more that people have grown up and become m aware that the MCs from old shows had some really hot moms this whole time. Now obviously there were some kids who were ahead of the curves on finding those MILFs hot, but a lot of kids didn't see them in a sexual light, they just viewed them the same way that they did their own moms.
