If you're determined to watch, I would say try a couple episodes of the 90s run. IIRC the 90s run only covers the first 1/2 of the story and skips alot of shit. The English dub is hilarious though, if you're into that.
Once you're sick of the 90s run, bail out to the Hellsing Ultimate OVA. It covers everything in the manga pretty well.
