Easy. Retsu is popular. Itagaki want to do a side business by renting his "character" and that's why we have a Retsu Isekai manga. Itagaki makes extra money while doing nothing and he can spend more time with mma fighters and boxers.

itagaki didn't want retsu to die, and didn't intend on it when he started writing the fight. but then he and his editor realized there was only one natural conclusion to a true deathmatch with Musashi. Itagaki actually cried upon realizing this.
