The current isekai trend treats love interests as background scenery at best. They have a personality, they have some basic gimmick, but they're basically just there to look cute. Tsundere characters require development, which is hard when you're juggling 8 different girls to appeal to every demographic, all while you're trying to tell a basic power fantasy story about how cool the protagonist is.
