After 3 decades of watching anime I can tell you that the only way to experience any piece of media, be it art or music or whatever, is to put yourself into a proper state for receiving, a complete zero of expectation and judgment. You must forget what you know, technicalities included, to even form an opinion.
What you suggest is the antithesis of that, is the "I want more of something" route, the mark of the casual.

Sometimes it's the opposite. There is anime that looks cute and beautiful, it seems fun but no matter the qualities it seems to have you can't convince yourself to watch it because you find the core premise repulsive and dishonest.

And sometimes you look past some red flags of an anime and you are ready to watch it until you realize it's produced by netflix and it can't be good so you drop it automatically. But otoh it looks so good.

I have trouble as well, till 10+ years ago looking at what airing anime got the best thread was enough, for a period I gave everything a try, now I just go by gut and instinct and I'm never wrong.
For older stuff is even harder, since the userbase now overlap with fucking Any Forums of all place.
Anyway I'm planning to just drop modern release the day I fell that the media no longer reach me, I'll still have 30 yrs worth of content to explore.
One final tip:There's an age for everything, the older I get the more I cant enjoy certain type of mango/animu, while I can finally see the beauty in things I thought little of before, dont be ashamed of enjoying things while you can and dont be to harsh on things you still dont have the taste for
