Because while Shirou's story exaggerates it to hell and back, on some level the desire to be a hero and fight against evil and injustice resonates with us. You probably don't want to be Shirou, but you recognize that 6-year-old you almost certainly would have said they did.

personally enjoyed shirou because his motivation for becoming a "hero" wasn't as generic as "i-i just want to help people!"
it's ultimately a response to his trauma. he wants to help people to make up for his survivor syndrome

Tournament, harem, swords, magic--UBW should be easy for me to like but it was just meh to me. It was supposed to be a good starting point but haven't checked out any other fate since finishing this.

Give the VN a read. The UBW anime is good but the details are a bit way too subtle for first time watching, especially so if you skip the first route.
