If you like it sooooooooooooo much and want to see what happens in the next Holy Grail War, watch Stay Night. Which one? Well, I'd say start with 06 and a few months later you can watch the alternative routes, the 14 one and the movie trilogy. But if you don't have that much time and only want to watch one sequel, watch the 14 anime.

Watch Fate/Zero if you want. And if you like it, watch the first couple episodes of UBW and then move on to HF. HF is the only route that's a proper continuation of the characters, themes and story that you'll see in Zero.

There's literally no way to get the full story from the anime only. Even the shitty 2006 anime doesn't adapt the Fate route correctly.
