Parts 3, 4, and 5 would be pretty dull animated IMO, the audience couldn't be too big. 1 and 2 have a lot more variety, multiple games. 3 also sort of ruins the "happy" ending from 2. 6 is jumping around so randomly it would either be amazing or awful.

Having done exactly what you did user I can say for certain that 6 seasons is in fact rushing it. You have to understand that this mahjong game went on for more than 20 years in real life. Shit was crazy, but every single chapter of it is worth reading. Also if you end up enjoying the manga after finishing it please read Ten. It's a bit slow at the start but once it picks up I'd say it's as good if not better than Akagi.

Akagi has 306 chapters and the anime covers 1-109 skipping through the (Very short) Nakai arc, it would be another two 26 episode seasons tops if it kept the same pace
