Besides it being shown in fucking pictures he literally states his intentions several times. There's nothing complex about him at all.

None of the characters in this manga are complex at all. Not that they have to be, though the story would have maybe been mildly interesting post golden age if they were.

For one it's very vague whether he is gay for Guts or in some other way, nothing about his personality is ever confirmed to the reader, the reader is expected to make their own conclusions

When people say Griffith is complex they are obviously referring to his relationship to Guts, not his dream of becoming a king.

But whether he is sexually confused or not is not clear, thats where the complexity comes from. Absolutely zero direct confirmation or hints in the manga that he is sexually attracted into Guts and that is why he is that obsessed with controlling Guts. On the other hand Griffiths personality gives that kind of impression, even though he never behaves in any gay way toward Guts.
Thats the complexity, the reader having to figure things out on their own and make some speculation, because the story isn't spoonfeeding you with lore dumps.

Yes it's slightly more advanced than the generic single minded shounen proctologist but don't kid yourself it's some deep psychological kaleidoscope of a personality just because you like the story.

I have read countless manga and watched countless anime, and none of them had a character as complex as Griffith, therefore yes OP was right.
Manga and anime are much simpler than western literature.

Well-written character is a meme like complex.
Only a story can be well-written (or not), and when it happens characters will shine.
Berserk story would work just the same without Griffith, and Griffith wouldn't look that good in the story of an average author.
