Weak in this case means there are many other stronger characters even in their allies.
Won't speak for your examples, but that's generally the only kind of protagonist worth having. The main exceptions would be characters like Saitama (whose wants and needs cannot be sated by combat prowess) or Alucard (who's fun to watch with beer in hand).
That's the grand majority of all protagonists ever.
Shonen protags in 90s were basically special talented chosen one, including One Piece or Naruto which started in 90s.
HxH became a pioneer of not making MC very special and super powerful and created recent trend of mediocre shonen MCs.
Gon might not be SUPER special but he's still the son of a Zodiac level Hunter and arguably gets some kind of genetic boon considering it didn't take him all that much effort to pass the Hunter Exam (the parts that are dictated by physical ability anyway.)

But he didn't, it took a lifetime to master any sword style, he only manage to use it, not mastering it. Also it's an in-universe misconception, people think it's the style that made the man but not the other way around.

I admit Gon is top tier talented but he is not so powerful currently.
He converted his huge talent to his actual strength, and we can't say "Gon is overpowered" only because of this unusual situation.

Ed got finessed by tons of people around him. The only thing going for him is instant transmutation, but other people have that and others could get close with tattoos or special equipment.

No where in the manga is it stated that it isn't the strongest. The styles evolve because someone might not be suited for it, but every other style is inferior to Sun breathing. If Tanjirou used any other style against Muzan, they would never have been able to kill him.
I keep seeing this mentioned albeit in different formats, and it's so damn retarded. It took an entire army and Amestris' best alchemists to drain Father of all his stones. All Ed did was put him down while he was already weak and unable to fight back he never solo'd father
