The manga's name isn't Yuji or Itadori or even Sukuna's Vessel. It's Sorcery Fights. Him being the most important part of it isn't a requirement to be a good protagonist. But he's no side character, in all the arcs he was in he had a moment were he was the most important figure. Also the two most important and most dramatic fights in the series up until now were Gojo vs Toji and Yuji vs Mahito.
