It's too bad the raw aesthetics of Judaism and Christianity are so powerful and ubiquitous that you cannot possibly detach their meaning from the symbols used to represent them. Whether or not the authors intended any meaning by their use, the meaning remains and becomes part of the story whether anyone likes it, wants it, or not. But that's even taking all of this talk at face value. When it's obvious they researched the meaning of the phrases and the history and the symbolism and attempted to give it all some specific context to the show that aligned the original context to something in universe (e.g. the Chamber/Doors of Guf; the Golgotha object, itself a reference to Ultraman which was referencing Christian symbolism directly), they necessarily carry and communicate Christian and Jewish context whether it was their intent or not.
When you combine both, Eva necessarily becomes a post-modern Christian work, no matter what the authors' intents were.

This kind of shit is exactly why Anno is so fucking butthurt about Eva in general - he's the preeminent example of death of the author and fucking hates the fandom for his own mistakes in story telling. He wanted to express his viewpoints as objective fact, and when the audience instead focused on coomer bait he accused them of being the autists.

This is a hyper-pretentious, bullshit explanation of death of the author. "Death of the author" as a concept is nothing more than recognizing that the information a text communicates cannot be strictly limited to only what the author wanted to convey. At a minimum, whatever the audience also knows or presupposes about the information is communicated along with it (for example: a cooking recipe will be read two different ways [convey two different sets of information] based on whether a hobby home cook or an expert chef is reading it).
That's all it means. It has nothing to do with some bullshit "tyranny of interpretation". That's just that author screeching some bitch-tears at the idea of being told his interpretation was wrong or stupid, and nothing else.

Your concept of "depth" is people explaining the most basic concepts of life but it's the very first time you've ever thought of it so you think it's complex. Christian iconography might be the most topical reference that is possible to make - it's all incredibly well-known, explored to death, and fucking every where.
