Ignore the obnoxious fanboys who screech about play order. Start with either Sky or CS, whichever appeals to you the most. I'd recommend CS as Sky takes about 20 hours start getting good and has rough combat, whereas CS is better paced and has really fun combat IMO, but again whichever appeals to you the most.

Cold Steel is fine for starting with. Trails in the Sky is garbage and you don't miss much by not playing it.
