Because they didn't rely on post production like todays shows with heavy use of filters. Even 2000s shows looked more soulful. Backgrounds are also a big factor. Most of them are now made of 3D models which just look out of place in my opinion. Back then it was much more tedious to produce anime but it looked more coherent.
