I wouldn't say Junji Ito does cosmic horror well, more like comedy horror. The exception being Uzumaki and Tomie which are cosmic horror. Most of his stuff is just funny though.
Pic related is pretty good cosmic horror, but you're right. The man mostly focuses on more comedic horror most of the time.

Gou Tanabe adapted some Lovecraft stories but it’s the only thing I know that qualifies as cosmic horror manga.

They are good? I've read quite a bit of Lovecraft short stories and I'm afraid that a visual representation of certain concepts might weaken them

Lovecraft styled stuff comes up fairly often in anime, but rarely is it ever done well in a horror style.
I’ve read a few and they’re great, the art looks amazing.
I just consider it as an adaptation, as if you were seeing one artist’s interpretation of Lovecraft’s works.
In my case, I prefer to read the Lovecraft’s story first and then the manga so that the creature I imagine is not influenced by the manga design.
But I understand your point. Representing the indescribable kinda goes against the point (though Gou Tanabe’s art can be vague when it needs to). In the end it just comes to your choice.

Jashin Densetsu/The Challenger to Great Old Ones is an absolute shame.
Its a pretty fun romp/roller coaster of death through Lovecraftian stories with some of the author's own spin, but its absolutely knee capped by the terrible translation.
It was translated apparently by a Japanese publishing company itself, so it vacillates between coherency, baby talk, and being almost incomprehensible.
I'd check it out if you can find it for the art, because that is unmolested. And really quite impressive.

I tried reading Lovecraft once but he uses obnoxiously difficult words for no reason. Should I try again? I like cosmic horror but Lovecraft seems overrated.
Lovecraft's writing style is kind of campy due to age and his overuse of specific words and italics is kind of annoying, but his works are considered the pinnacle of cosmic horror for a reason. The atmosphere and ideas he presents are unbeatable and the inspiration he draws from is varied enough that it doesn't feel repetitive.
He's got a limited vocabulary, though. There's a complete list of them somewhere for easy reference. Like "lambent".
His prose were pretentious even for their time.

Lovecraft stated unequivocally that Lord Dunsany and E. A. Poe were better than him, and he was right.
Its just part of the style.
He was a pompus wannabe aristocrat and backed that up with his skill with the english language as much as he could.
There are better and worse stories from LC. A number of them are basically identical, but others are all inventive despite dealing with similar ideas - putting unique spins on the concept.

Sachiko Uguisu is better than Ito in my opinion even though she's heavily influenced by him. You Will Hear the Voices of the Dead is legitimately hilarious while being extremely fucked. I also liked the episodic nonsensical nature of it.
