How do I start with this? is there a chronological order? Does the mulitverse stuff matter? ARE THE NOVELS IMPERATIVE? WHAT

Start with Zero, then Fate UBW. You can then watch Stay Night and Heaven's Feel. After those, if you are willing to invest the time, then read the VNs. They are pretty rewarding for someone who really likes the universe. You can move to whatever the fuck you want after.

2. Since you're not going to do that, watch Stay Night, Unlimited Blade Works, Heaven's Feel, and then Zero in that order. Then Prillya.
3. No matter what you do, watch the cooking anime last and Carnival Phantasm before that.

Don't do that; Zero is a prequel. It spoils the main series.

watch just uwb seasons then hf and zero last because it ruins the rest of the shows since it just miles ahead of everything else
you get the gist and if you still want more there are like 20 other fate shows you can watch
if you start with stay night chances are high that you just drop it

Zero is a good starting point if you don't want to read the visual novel. You won't get every little thing and it spoils a couple things but who cares, that's just how Fate is

Carnival Phantasm is a joke series that relates to the viewer's specific knowledge of Fate/stay night and Tsukihime. The jokes aren't as funny if you don't know the material. Likewise, Emiya-san Chi no Kyou no Gohan is a cute, touching series about cooking that really hits after you've already been introduced to the characters.

I could have worded it better, but basically watch CP and then Emiya Gohan once you've watched and/or read the source material its based on.

Ideally the VN, but failing that the DEEN anime. The anime is problematic because it wasn't exactly faithful to the route it was supposedly based on. UBW and HF were meant to be experienced after Fate, as they build on the details introduced in the earlier works.

zero spoils almost every big twist from the VN

It's not really as confusing as it seems. The original Fate Stay Night visual novel has three routes (Fate, UBW, HF) that all have anime adaptations and then Zero which happens 10 years earlier. Then you just have a million spinoffs

Other than the sister thing and Kirei, what does it really spoil? It doesn't really seem to hinder anime-only enjoyment much
