It didn't seem like Yujiro was struggling. He could have killed Baki multiple times, whenever the latter got KO'd. Also Yuichiro's ghost seemed to think Baki had a chance to win, which adds him to a long list of people who failed to grasp just how OP Yujiro really is. Including Motobe.

I doubt it. Yujiro is less a character and more of a concept. A walking plot device.
The instant he's no longer the strongest creature, the Baki universe loses all its "tension", so to say. He must remain the unattainable ideal.

That's only really the case in the later parts of the series. In the earlier parts he was just the strongest guy around, but he wasn't infallible. Remember when he got spooked by someone turning a doorknob harder than him? Or when he was briefly afraid while fighting Doppo? Or when a tranq dart and net were enough to incapacitate him? He's been rewritten over time to be less human than he once was, but that doesn't mean there aren't specks of humanity in there still.
This user also hits the nail on the head. Yujirou is a lot of bluster and insecurity covered by a thick layer of insane skill, natural talent, and raw power.
