The ships just keep spawning out of nowhere

You'd think these huge spaceships would take several years, but they never show them being built, and no matter how many thousands of ships get blown up every battle, by the next battle they have already respawned. It so ridiculous that during Julian's final battle, their side has too many ships, and not enough manpower to man them.

the logistics are a bit exaggerated but 99.9999% of all civilians are involved in the mass production of space ships which is why they are stuck in

Despite their technological advances, their ships are also very large, so it scales relatively. It takes NASA 5 years to build a shuttle, all LOGH ships are 1000 times larger than a shuttle, so I don't see how they could finish a destroyer shorten the amount of time, even with advanced tech.

You actually see the Brunhild shipyard in the Gaiden.

Also Julian had more ships than crew for them because he let the sailors leave after Yang died, but not the hardware itself.

Also remember the >F>P>A side was multiple time stated to be fielding ad-hoc fleets consisting of almost decommissioned or second line ships after Amlitzer. Yang was the only one with a "fully fresh" fleet.

NASA also doesn't get a lot of funding and doesn't have wartime urgency funneling resources and effort into it.

They're locked in a protracted war, of course they're cranking out ships all of the time. Production accross multiple worlds is focused on that.
But these logistics isn't the point of the narrative, so it's not taken into focus. LoGH isn't hard scifi, it's space opera. It's military operations and politics on a space backdrop.
Speculative fiction doesn't need to take into account every single minute detail about its setting. If LoGH had pretentions about being "realistic" then sure, your point would be valid, but it doesn't.
