It's difficult to express it really.

The frames have more detail because of natural flaws in hand-drawn techniques. Nowadays, computer animation allows even, flat, "perfect" drawings.

You may be partly affected by nostalgia, but older anime was more commonly made with a focus on artistic passion first and profit second. Nowadays it's all about the profit and rarely about the artistry

big money just knows how to produce and pander to the lowest common denominator, they cannot create art because they don't understand art, because art requires soul and people behind big money don't have a soul.

People are saying cel animation but that is just a symptom, if the producers had any idea about art they'd switch back to cel animation (among other things) but money has become the bottom line.

What anime producer would go through the effort of actually building the robots of his anime in real life just to get more realistic movements and shots in his movie?
None, they just work from what is established these days and cut corners wherever possible.

They could do some neato stuff with light and colour in cel animation. It's taken quite some time for modern computerised animation to catch up, and that only applies if they care enough to do so.

Nah, objectively animation was a lot better in the late 80s. Anime films nowadays look like shit.
