That's because villains are either made to behave and think differently to set them apart from the rest, because they are villains, or it's done because they are often the characters writers dump or project their fetishes on. They feel bad about doing that with MCs or it would be too extreme and might alienate the typical audience, so they do it with villains instead since you are free to do whatever you want with them since you get away with everything.
