So instead of SSJ3 Goku beating Frieza, it would be more like SSJ10 God Ultra Instinct Legendary Kaioken x 1,000,000,000,000 Goku fighting Pilaf.

The point is that people are arguing a hypothetical Saitama vs Goku and obviously if you assume that Saitama is on the level of unbeatable plot manipulation [whatever] then he is going to win against any Goku incarnation. But the problem with this is that you're arguing using a made-up [headcanon] version of a character. You can do that but be specific that is what you mean.
But based on what he's actually shown, he really isn't strong compared to a lot of verses. If you wank him using the guides and assume they meant a star by ほし then he's casually star level which depending on your interpretation, is either First Form Freeza level feat or Super Perfect Cell level feat. So if you look at OPM canon and wank him a bit, he's early Buu Saga. And DBZ, contrary to popular belief, is not a very powerful verse.
A lot of characters are stated to be unbeatable but that only ever applies within their own verses. GER for example, which people love to wank as being unbeatable, will get godstomped into oblivion by any of the Outer Gods from Lovecraft mythos.
You argue in a discussion based on the information available and if, eventually, it is stated in the webcomic or any other media that Saitama is in fact an undefeatable plot manipulating God, that does not validate earlier arguments made at the time when we did not know that. If that ever happens, Saitama will simply get an upgrade from that point onwards. And right now Saitama is not that level of powerful. And even then, there are characters with far more powerful reality manipulation abilities, famous examples being toonforce characters and Sun Wukong from the myths or the infamous Thought Robot version of Superman so powerful, he literally won because he is the epitome of a superhero and his story was better than the villain's.
Stop conflating a [headcanon] omnipotent God Saitama with canon Saitama with feats and statements from the canon media. The second is not very impressive even if you wank him.
