She could have made melon's father finally coming in contact with melon to make him mentally snap, but she bitched out. They could have had Melon die to fit the "people like me don't deserve to live" and give him a tragic death, but she didn't. He could have been a character who set up the cons of having a hybrid child and then fuck off after the doctor shit, but she insisted in keeping him.

Melon was basically used as a way to resolve the big conflict point in their society (the black market). However, at first, Melon exists to create an internal conflict within Legoshi with regards to a possible future child between him and Haru (please no). Then Paru utilized him in order to really raise the stakes and then you got what I wrote in the first sentence.
If you're talking about his character, well let's be honest here. He's a very entertaining fellow.
