Anno only made one worthwhile anime while Tomino made several. Tomino also isn't afraid to move on and progress his work (even within Gundam) while Anno has spend the last 15 years redoing his one good work because I guess he felt people didn't get his message or something.

If you don't want to start at the beginning, watch 0080. It's an OVA that's only 6 episodes long. You're going to have to watch the older TV series eventually though if you want to actually get into the franchise though. I wouldn't suggest watching anything but 0080 before 0079 though.
Tomino is not a good visual storyteller or good at writing natural dialogue. Turn a being as good as it was mostly came down to everyone else in the staff I theorize which is why g reco looks good from an art and animation standpoint but often times the direction is dated as shit. Anno is really good at having high impact punchy transitions and dialogue like in kare kano but also really great at letting scenes breathe and speak for themselves (shinji playing in the sand box in end of eva is one of the best moments of visual storytelling in his career). Anno is just way better in every way as someone that was pressured into watching gundam because of gundam fans shit talking eva constantly I really enjoyed the franchise but the highlights were not even directed by tomino and in spite of enjoying his stuff for the most part ; the only thing victory gundam was dogshit everything else ranged from decent like f91 or zz to very good with turn a being the outlier masterpiece. Anno’s style is just way more impressive to me and the way he transitioned it to live action making some really amazing films just shows how he is leagues above almost every anime director as an artist. The rebuilds were Fucking awful though but Kare kano and Eva are giants of artistry.
0080 and thunderbolt are good if you just want to kind of see what it is about but you should def look up a summary of the original series to get the most of them. Could also try the original films but they cut some shit and are still very much old ass anime
Why is it that this concept of "the good entries are because of everyone else, not the director" exists? It could theoretically apply to every series since every series is made up of a ton of people. And the same thing could be applied to bad things too. Why is it everyone else that was responsible for Turn A being good but it's solely Tomino's fault that Victory has issues? You're literally just picking and choosing things that fit your preconceived notions.
Just start with original gundam...yes I know UGHHHH the animation is SO terrible but that is where you start when you want to watch the most influential anime series of the late 70s
