Guns. It's extremely easy to make them if you know how.

Slate armors. It's a surprisingly simply concept, but people didn't use it until the late medieval era.

They do. Shizuko introduced it as a way for untrained soldiers to have projectile weapons before they employed guns en masse. You need special training for warbow. A crossbow can be loaded with your back. every farmer has back muscles.
