i want to try mapo tofu but i can't justify ordering tofu and rice when i'm eating out

I tried this last week, the key issue I've seen is that Amerisharts refrigerate our eggs, so cracking an egg into a bowl of steaming rice brings the whole thing too low in temperature. If you let the egg warm up in a water bath for a few minutes and makes sure the rice is as hot as possible, "the rice cooks the egg" and it's actually a pretty decent meal for how easy it is.
