I told myself I should try them after liking the DEEN anime but gou/sotsu has left me completely devastated.
Did the VNs go to shit in a similar way but the fans just pretended everything is fine because it's been way too long and they can't let go?

The VNs are very good as long as you ignore the ending.
Matsuribayashi was notorious for having the characters escape their fate through home alone traps and cartoon phsyics, and Umineko's episode 8 made WTC a joke in Japan (although Nips didn't like the perceived slights in Tsumihoroboshi either)
Umineko's vn isn't even on the japanese vndb top 500 vns, to give you an idea.
Western fans are the ones praising Umineko to all hell, for certain reasons.

Even the earlier chapters of Higurashi are a mixed bag, honestly.
Onikakushi is good if a bit slow to start, Watanagashi isn't so great due to everything just happening around Keiichi and Meakashi invalidating virtually all of it, Tatarigoroshi is good, Himatsubushi is okay for what it tries to do but isn't really all that interesting, Meakashi is good except for how it ruins Watanagashi, Tsumihoroboshi has a strong beginning and ending but the middle part and CLANG CLANG drag on immensely, and Minagoroshi is fine though many people don't like the CWS parts.
Higurashi has always been a notably amateur work, and while its high parts are genuinely great, it's always had serious flaws dragging it down overall.
