A well disciplined army won't need to plunder, since the state already gives them what they want the most, peace and stability in their homeland, which they will use their lives to defend.

Wars are funded on borrowed money, the entire capitalist system is based on the promise that the king would borrow money from his subjects and pay dividents when they win. In order to keep costs down you dont pay your troops, theres in fact too little money to go around, so they are payed in what they loot. It's not until the formation of absolute monarchy where countries become rich enough to have standing professional armies that this starts to go away. In fact, many wars has been lost where kings were unable to stop their men from looting a village or army camps instead of pursuing the fleeing army.

Not exactly. For example the Romans had state-welfare. The middle-ages had sorta-private welfare. But welfare is not exactly a great motivator when you are risking your fucking life.

As a knight, you need to pay for your armor, your weapons, your horse, your transportation and food, and potentially for your ransom.
Armor, weapons and horse need to be maintained and sometimes replaced.
If you get crippled (remember, you are going to war), you lose your ability to earn more money.
