I think it's expanded in the LN, but basically, the albinos always loved sniffing their own farts while the other ethnicities worked menial jobs under the guise of "equality". Then when the robots attacked the albinos threw all the "Colorata" out as meatshields, then invented all the pig psuedoscience to justify it
