Because fifteen years ago someone cracked the formula to translate superheroes comics into movies and it turned into arguably the biggest movie industry of all time. And that's from a genre that is extremely small compared to manga, and the gap only grows with each passing year.
Everyone is trying to be the one that finally figures out the equation to translate manga into movies near-indefinitely. There has been attempts that have actually been a little more successful at this, like Alita or All You Need is Kill, but nothing that really shows repeatability.
Why One Piece specifically? My pet theory is that some Netflix exec took a look at how popular the manga was, flipped through the first volume, thought that it'd be really easy to adapt (wow, it's just pirates on the sea, with monsters and a guy with stretchy arms? easy!) and pushed for the adaptation. Now he's too embarrassed to pull back.

Except Oda showed with King that if someone has dark skin tone, it's dark in the manga as well. Usopp is the same color as Nami or Sanji. King is the only dark skinned One Piece character introduced so far

-Kid’s attack launches Big Mom’s attack through the hole Law made. She lands head first and is knocked out
-Kid and Law collapse.
-Momo sees the attack and is amazed. His head starts hurting
-CP0 are fighting Izo. They hear that Big Mom has been defeated
-we cut to the Gorosei, who say to prepare for the biggest change to the world since Whitebeard died. They wonder if Luffy will beat Kaido now
-Kaido is looking down over the roof and laughs. Luffy is lying on the ground
-“You can’t beat old age either, Linlin! First Whitebeard, now you… only the strong survive! That means I’m the strongest!”
-Luffy gets back up. He’s angry that Kaido is laughing at his friend’s defeat. He uses G4, and hits Kaido with King Kong Gun
