Most game dev want the players to use every members of your party so there always create problem that only a specific class could solve. Healers are usually use in dungeon to prevent your party to succumb to attrition too soon when each encounters take away some health + mp. Also healers are often the only class that have dispell and cleanse to deal with status spam

Considering how high on my list of priorities surviving is, I would say you can never have too many healers. The idea is so silly, if you think your healer is superfluous, isn't the party doing too well to need to replace him with some other role?
