In the novel, everything about Dracula is old and weird and not right. His clothing, his weird teeth, his red eyes, his big droopy moustache (a stylistic thing of the times, which no adaptation save for a single Italian one has ever given him), Dracula is a piece of medieval darkness dwelling in a shitty old ruin no one wants to go near. He's actively villainous and evil. He learned sorcery from the devil and feeds his "brides" babies he steals. He manipulates and threatens Harker constantly but never overtly. He's crawling around on the walls and has empty rooms filled with massive piles of old dusty gold, like a monster from a folktale. And he's a violator. Dracula, the story, is all about frightening violation of things. He's a medieval superstition violating time and reason, reaching out into the comfy, modern, rational Victorian Age where he doesn't belong, he can't help but savage the entire crew of the Demeter, and he starts going after helpless people and perverting them, such as Lucy Westenra, who was apparently somewhat psychically sensitive. He noticed that she noticed, and he came for her. And then once the fight is on, he explicitly targets Mina because she's the entire core of the group, and without her they'll crumble, but he doesn't kill her, he turns her into a vampire. Motherfucker was cruel and monstrous in every single way possible. Now these days he's a tragic lovelorn romantic.
