In Dark Fate a T-800 kills John in 1998 and then spends the next 20 years with a Mexican woman and her son.

Why

It was an infiltration unit for a post-apocalyptic future where everyone is a grimy survivor. There is no indication that T-800 is specifically engineered for fitting in pre-apocalypse society. It's one of the things I enjoy about the first movie, its pretty clear that Skynet is an AI that does not fully understand humanity.
