Not true. The "old tongue" of the First Men is still spoken in the North, Iron Islands, beyond the wall and in Skagos and Bear Island. Dornish have their own language. The Thenns also have their own dialect.

The common tongue is spoken by everyone in Westeros, but Nobles and Maesters speak High Valyrian. That's in parallel to the common germanic tongue and Latin and it's derivatives in Europe. Or Gaelic in Ireland and Scotland.
