GoT was really bad about making every fight Clumsy Slow Strong vs Skilled Fast Agile, only getting the balance right a few times. The fight between the Viper and the Mountain is supposed to be tense because the Mountain is insanely fast and *skilled*. Oberyn dancing around and showing off is nerve-wracking because he's fucking around against a dude who could easily kill him, but in the show it's played as Oberyn massively outclassing the giant idiot until the end.
The fight between Jon and the Thenn was a lot better in terms of choreography. We see that the Thenn is huge, swift and strong, but Jon has a little more skill. Jon has to use all his training to get the edge on his physically dominant opponent, and it results in a fun fight t o watch.
