Weight fluctuates during the day so always weight yourself at the same time.
Also, when you eat a lot or not much in a day your weight will change rapidly because the water amount in your body changes, so you probably didn't gain as much weight as you thought and after eating less for a day you lost some water and are now back to your same weight.
Any way, hit the irons and gain weight.
