Not even Thomas Schnauz wanted to talk about it when he responded on twitter, he excused himself by saying he doesn't work for Sony anymore so he can't talk about that stuff and seemed to ignore the reasons anyways, most people assume the recast was made because of the HBO series Don leads, schedule must have been compromised with covid and Bob's heart attack, some others say something messy must have gone down so they don't even want to acknowledge the recast and nobody wants to talk about it to avoid drama and further problems
I assume it was simply the first reason, and that sony and the production just hope nobody cares enough about it and still enjoy the show anyways

Honestly I'm surprised they didn't just announce it before the season aired. It would have been free promotional headlines and would have also given people time to get over a disappointing but of news and the completely get over it when Nacho dies in ep 3 and everyone is talking about that instead
