Actually censorship is a thing in Japan too, especially at console games and after the creation of CERO. Also lots of American games (even the family-friendly ones like Crash Bandicoot) get heavily censored in Japan. Check the YouTube channel CensoredGaming for some examples.
Also the Samurai Shodown series used to be quite gorish, especially with the finishing moves that among others included cannibalism. Now all the gore is removed.
