Because negative stereotypes about Italians are allowed to exist while all other groups have immunity, and the suffering of Italians in America is completed erased while it is highlighted for all other groups. Italians built most of modern america, and that is often forgotten.
But funny enough Italian Americans are the only group that does not care, because they have pride, and criticism doesn't affect them. Only if you fuck up their recipes can you anger them. Everyone wishes they were Italian.
