It seems so wonky and complicated I doubt native speakers even use it correctly

you mean the subjunctive right? They use it intuitively they dont actually understand it. Just like how you probably dont understand the subjunctive in english, but still use it all the time.

Every non monkey understands it conceptually. English speakers do too even if you don't have an ad hoc tense.

Spanish is hard but you only gotta nod and say a few things to get some ass in latinx america

I know the subjunctive in Italian even though it seems easier than the Spanish one. It's just a hypothetical tense right? Like in English, you're not supposed to say "If I was rich" but "If I were rich". I think with enough experience with the language you'll get a feel for the right situations in which to use it.

Another example: if he go vs if he goes.

if he go sounds ebonics. if he goes is the normal way to say it

That wasn't even a correct use of the subjunctive in english 500 years ago.

I have never subjuctive used like that, but a similar one is this:

With past tense
