there are lots of building that were not apartments in europe but more like palaces, the nobility and rich merchants lived in it, avarage ppl literally lived in the basement as servants
when this class system failed the buildings didnt just vanish, they were turned into multiple apartments with weird arrangements, also much slower than it was originally

Here we have different plans for electricity (for the entire apartment) if you have a gas stove and they're cheaper, so gas stove is still a common choice even for new apartments
Though being an amateur cook I wouldn't be able to use it. I don't know how to use anything other than induction at this point
