On this holy day I will share one of my special recipes, Pasta Selanik.
Sautee onion diced very thinly in olive oil. To that add chopped roasted red peppers (Florina peppers), no seeds. Add bukovo or any other chili to your liking and sautee for half a minute. Add tomato paste and sautee for one more minute. Deglaze with white wine and add finely chopped garlic, fresh oregano, salt and black pepper. While the wine is boiling off crush the red peppers with a wooden spatula as much as you can, until the pieces are very small or even pureed. Add pasta water. Heat off and crumble a hefty amount of feta cheese, stir well until completely melted and creamy. Add pasta and a little more pasta water if it looks dry, add finely chopped parsley, mix well. Serve hot, top with good olive oil, chili flakes and parsley to make an impression.
