What's the chemical mechanism for why this happens? Does the pollution takeaway too much oxygen present in the water? Lead was present in the pollution, right? So I guess it got oxidized...

Depending on whatever the toxin is the mechanism and cause of death is uncertain, but it's not due to the water getting deoxygenated. For lead to consume all the water's dissolved oxygen, it would require concentrations that would be lethally toxic long before the oxygen is consumed.

Apparently, ingesting (elemental) mercury is not super toxic as long as you don't breathe in the fumes. There's a video of some old Russian dude slurping mercury in order to prove this.

as long as the liquid metal doesn't get stuck on your hand for more than 1-2 seconds you won't get burned by it.

same thing with liquid nitrogen by the way. It's not dangerous to pour some on your hands. It will evaporate faster than you will get a frostbite.
Just don't stick your hand inside liquid nitrogen bottle for long if you don't want to say hasta la vista to your fingers

It's not. Mercury vapour is appearently what's so insanely toxic about elemental mercury. Of course I can't imagine it being good to ingest mercury but it's apparently not as bad as previously thought.
That being said, mercury and mercury compounds are some of the absolute scariest chemicals there is, I wouldn't go near that stuff unless I absolutely had to
