In the 80s budget airlines started cropping up that got rid of most amenities, cut the seat space down, and offered bare bones service in comparison. These airlines made air travel more affordable for lower incomes, so they were able to not only cut costs, but also make huge profits because demand went way up. The more traditional airlines simply couldn't compete and had to adopt the cheap cut rate way of doing business in order to stay competitive. This created a feedback loop where the cheaper the flights got, the more customers wanted to fly. This encouraged even more cost cutting, etc.

International flights are basically the only place you will find classic full service airlines anymore because thats the one market where people are willing to pay a little extra for comfort.
