No they can't lol, Latin is a highly inflective language. They'll recognise a few roots and try to make sense of the sentence, and then they'll be off by a mile or so.

Im actually argentine of spanish descent but I have learnt italian fluently and lived in italy and spain, and studied two years of literature(and studied latin academically as well) I think Im more than qualified to answer this one.
The vocabulary is easy to understand for italians, spaniards will struggle a bit more(due to spanish having more admixtures with arabic and visigothic german, ostrogoths didnt really influence italy that much, many latin words in spanish were replaced with their germanic and arabic counterparts) , but both languages descend from latin so both of them have an extensive latin vocabulary.
The main problem arises with grammar and syntax, as some anons noticed, classical latin tends to be SOV, while both spanish and italian are clearly SVO. Plus latin has more declensions than these two modern languages, meaning a lot more can be said with fewer words in latin.
Phonetically, latin was a lot rougher than both spanish and italian, it didnt sound as sweet or singing, it sounded more like Russian or some other rough sounding language
