Protip: let it marinde overnight in buttermilk/kefir + thinly sliced onions (also add salt to the mixture so it can penetrate the meat through osmosis). It gets really tender and juicy that way.
Also fry it in lard for maximum flavour. You can also use clearyfied butter (I think Austrians do it that way), also great.
