is there a reason Mexican food lacks vegetables?
Not just Mexico, all of Latin America. I visited my family in Ecuador and barely remember seeing any vegetables in the food other than cilantro garnish.

Probably because most of them weren't endemic to the region, fruits are very popular instead.

Beans are mostly a chicano thing.

Tex-Mex sucks ass. The best original Mexican food within the USA is New Mexican cuisine. The best food in Mexico is Sonoran. The best Mexican food if you're into seafood is Baja Californian food.
