Because once in USA they feel culturally vulnerable. Any immigrant knows this, specially poor peasants (most mexican immigrants)
This sense of cultural vulnerability makes them over exagerate their roots (like adopting heavy mexica larping with cult of virgen de guadalupe, two seemingly contradictory beliefs)

Thats an easy answer OP, most "X-American" identities are born out of self preservation when facing discrimination in society. "White america" is an amalgamation or a club where different etnicities get the whitepass and become white, white america dictates who is white and who isn't, in the past, Italians, Irish, Jews, Slavs, etc were non whites in the eyes of this racists societal club, but today is used to tackle the percieved "enemy", i.e immigration of today (latinos, central americans, black africans, menas, etc)
