By season5/book4 they are completely different stories and the show becomes basically fanfiction. First 3 seasons are pure kino and 4 and 5 are still pretty good. After that it's as trash as S8 but normies just hadn't figured it out yet. Unfortunately, there's no natural 'jump-off point' though so you'd be stuck sitting it out.
All in all I'd say it's definitely worth watching though. GRRMs writing style is horrible and the books will never be finished anyway so it's definitely better to watch the show than waste time reading the shitty books.
