Today we have male physiques like Henry Cavill, Chris Evans, and Rege-Jean Page all over the screens. Where were these men in the 60's-90's? Pierce Brosnan doesn't count because even though he is handsome he does not have the same sort of body. Arnold Schwarzenegger also doesn't count because even though he's incredibly ripped, he isn't attractive in the same way. The thing I'm noticing seems to cut across racial lines as well (maybe not Asians). Are there any males in the history of kino that I am totally forgetting, or is this something that's really different today compared to the past?

Back in the '60 through the '90s, male stars like Pierce were sex symbols as a product of their toxically masculine charisma and charm. Nowadays that shit doesn't fly, so they write action stars as safe, borderline onions-tier characters and make up for this with insane physiques like Hemsworth's.

No you aren’t forgetting anybody. What you’re noticing is the fact that Hollywood is courting a gayer/female audience now. So they push bimbo beefcakes like Henry and Chris and don’t care as much for actors with regular bodies that are better actors.
Cavill put effort in which is in line with Superman. Clark doesn't need to be ripped but growing up at the farm will give him a fairly good build. Hemsworth is just a typical aussie, nothing new.
