You realize these Disney "making of's" are heavily edited to make it seem like a well thought out production, it's basically Disney propaganda and you're falling for it. In reality, the animators on the Lion King were b-tier animators, they were all the artists who couldn't make it on the big production at the time. Every production is a mess and there was no 'golden age'

Which is sad because I think their eyes look cool in artwork. I wish they weren't insecure about them.

Outside of the eyes she looks like a young Asian girl. Her skin could've been a shade or two browner, and yeah the eyes should've been more slanted and narrower, but for whatever reason that's what is deemed as racist, not the round jowely face, little pig nose, bushy eyebrows, and big teeth.

No one's eyes are circular. It's just an artstyle. The difference in size between asian eyes and everyone else's eyes is actually very minor. Like a millimeter's difference. But because humans have a very acute perception of faces, that very minor difference might seem larger in your own mind. But when you actually look at eye size objectively, you'll have to agree that large cartoon eyes fit no one. And it's all styalized.

But even putting all that aside, She's still very much asian looking. If you couldn't tell, then you're a faceblind retard. But no... in truth, you could tell. You're not that dumb.
